MIDI organ pedal concept

Hi there -- I'm a newbie at some of this but hopefully I can find some help.

I'm looking to make a DIY midi organ pedal for playing keys with my feet while playing guitar or something else w/ my hands. With that said, I have seen a couple posts out on the internet about this project and it seems like there's a million ways to do it. I'm asking you pros out there to help me design a pedal that...

1. Is capable of hooking up to a master keyboard via midi (Akai MPK 49 or MicroKorg synth) to control these instruments

2. Can trigger notes and or midi assignments (simple stuff)

3. Velocity OPTIONAL

4. Can transpose with my master keyboard to trigger multiple octaves (I think this is already accomplished on the master keyboard but thought I'd post it anyways)

CONCEPT:

I have a set of Hammond M3 pedals (each key has its own wire connected). I'm thinking about getting a cheap Casio or some other inexpensive MIDI keyboard and gutting it and connecting the Hammond pedals to the Casio circuitry. Is this possible? Would this unit need to be powered?
