Starting programming your own MIDI PIC

Hi!

I'd like to start programming my own MIDI PIC for a DIY synth (which is currently controlled by CV). Where to start? How to write the code? ("C" or "C++" most likely). I'd like to know everything about it, please!

And if it's too complex or time consumming, where to buy preprogrammed PICs for MIDIfying synths (North America preferably)?
