Questions about Graphic LCDs

I see that the KS0107/KS0108 or HD61202 controllers are prefered over the T6963C graphic LCD controllers because of performance reasons.  But I can't seem to find any KS0107/KS0108 or HD61202 controlled LCDs in the 240 x 64 size recommended.  Mouser and DigiKey have 128 x 64 pixel GLCDs controlled by a KS0108 controller but their 240 x 64 displays are controlled by the T6963C.  Does anyone know of a North American supplier of a 240 x 64 pixel KS0108 controlled LCD?

My project is a Hammond B3-like drawbar controller for my Yamaha P-150 piano and, perhaps, Native Instruments B4.  I'm leaning toward using encoders, rather than linear pots for the drawbars so I want to have the display show drawbar positions graphically in some way, along with the numeric drawbar position (i.e. 0 - 8 ).  Can character LCDs be used to display vertical bar graphs?

It seems that the KD0108 240x64 LCDs from Displaytech have been discontinued. Better alternatives are not available.

Maybe some of those PCD5844 displays would be perfect for you, but the adaption into the application requires some software skills.

In the character example you provided, I would have the drawbar footages displayed on the top line.  On the bottom line, the number of the drawbar setting 0 - 8 on the left and the vertical bargraph on the right.
