The detented ones basically have a clicky feeling and "snap" to values, which is really nice for discrete values (select a patch, scroll through the menu, ...), undetented ones do not have that feature and are hence used for continueous values (cutoff, resonance, ...). You can get detented ones, open them up and turn them into undetented ones pretty easily, so you can just get the ones Smash sells (get some extras, in case you destroy some) and de-detent them.
