Just saying: There's no midibox project called "6582". There's the mb6582, which is Wilba's impressive implementation of an mbSID v2. 6582 is just the SID chip. As is the 6581. </mini-rant>

I'm in a rush so I am only answering a part of the q: Both PSUs you linked to are cheap switching supplies (Schaltnetzteile) which are generally not a good thing to use in audio applications (like the SID or FM) as they tend to introduce lots of noisey and audible voltages spikes.
It is the ultramate ableton controller ;D I don't use abletone, hence I am not all that excited about this really, really cool, pretty complex and incredibly powerful project - you ableton users should be though!
After years with my old burner it refused to burn my PIC12Fs (8 pin) so I cracked and got a new one which works really well. Not USB but pretty cheap and working extremely well :-)
Personally I like the "get a bunch of cheap chips, no matter what they actually do and some test pcbs (from mouser, reichelt or conrad) and just try" approach better.

Sieht doch dem ruby sehr ähnlich. Wenn Du eh grad mit dem LM386 rumspielst bau gleich einen Ruby mit und häng den an eine 4x12er Box als Gitarrenamp.
